The weather outside is frightful, but something hot and cheesy always helps.  This casserole (or is it a hot dish?) is easy and delicious and even low-carb if you’re into that sort of thing!  And since it comes together quickly, it’s a great weeknight dinner.

Makes 6 servings

What you need:

2 cooked chicken breasts, shredded or cubed (I boiled them in chicken broth but you could use a rotisserie chicken or even leftover turkey!)

2 cups of broccoli, steamed

1 8 oz block of cream cheese, softened

3/4 cup of chicken broth

1 1/2 tsp of minced garlic

1 1/2 tsp of Italian seasoning

1 tsp of paprika

1 tsp of black pepper

1 1/2-2 cups of shredded mozzarella cheese

 

What you do:

Lightly coat a baking dish with non-stick spray

Add the cooked, shredded chicken

Season with garlic and spices

Mix the softened cream cheese and vegetable broth and pour over the chicken

Add steamed broccoli and top with mozzarella cheese

Cook at 400 degrees for 20 minutes and broil for 3 minutes to crisp up the cheese.
